Thai Curry Delight
A delicious lunch time or quick dinner recipe ... heat Minute Ready to Serve Jasmine rice, add in coconut milk and zesty curry powder, just the right touch of stir-fry veggies, and cooked shredded chicken --- top with crushed peanuts.

Heat rice according to package directions. In a small microwave-safe bowl combine coconut milk and curry powder. Add vegetables and chicken. Microwave on HIGH 2 minutes. Fold in rice. Top with peanuts and chutney, if desired.
