Coconut Pineapple Clusters

With Minute Rice, yummy flaked coconut, Dole crushed pineapple, a few other ingredients -- and you have a delicious drop-style cookie.

Ingredients

1 1/2 cups Minute® White Rice, uncooked
1 pkg (14 oz.) flaked sweetened coconut
1 can (14 oz.) sweetened condensed milk
1 can (8 oz.) crushed pineapple, drained
1/3 cup all purpose flour
1 Tbsp lemon juice
1 tsp grated lemon peel
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1/2 cup semi-sweet chocolate chips
non-stick cooking spray

Directions

  • Preheat oven to 350ºF.
  • Prepare rice according to package directions. Cool.
  • Combine coconut, condensed milk, crushed pineapple, rice, flour, lemon juice, lemon peel, vanilla extract, baking powder, salt and chocolate chips in large bowl; mix well.
  • Drop by heaping tablespoonfuls* onto baking sheet lined with parchment paper and sprayed with non-stick cooking spray. Bake 18 to 20 minutes or until golden brown.
  • Cool on baking sheet 5 minutes; remove cookies to wire racks. Cool completely. Makes 3 dozen clusters.
  • Substitute 2 cups cooked leftover rice.  *  Use an ice cream scoop for more mounded cookies.
