California Rice Salad
How's this for side dish made easy? Start with cooked Minute Rice, Dole Pineapple chunks, arugula or spinach, add in cooked bacon, red onion, just a touch of olive oil and tangy Dijon mustard.

, uncooked

(20 oz.) pineapple chunks
1 1/2

packed arugula or spinach
1/2
lb
sliced bacon, cooked, drained, and crumbled
1/2
cup
red onion, sliced
1/3
cup
olive oil
1
Tbsp
Dijon mustard
salt and ground black pepper, to taste
Directions
Prepare rice according to package directions.
Drain pineapple; reserve 1/4 cup juice.
Combine rice, pineapple chunks, arugula, bacon and onion in large bowl.
Whisk together olive oil, reserved juice and mustard in small bowl. Salt and pepper to taste. Pour over rice mixture; toss to coat.
