Tex-Mex Bake

White Rice

Brown Rice
, uncooked

lb
ground beef
1
can
(15 oz.) chili beans
1
can
(10 oz.) diced tomatoes and green chilies
1
bag
(12 oz.) crushed tortilla chips
1
lb
prepared cheese product, cut into cubes, divided
sliced green onions and sour cream, optional
Directions
PREHEAT oven to 350º F.
PREPARE rice according to package directions; set aside.
BROWN meat in large nonstick skillet over medium heat; drain off excess fat.
MIX in cooked rice, beans and tomatoes with chilies. Cover bottom of baking dish with chips. Layer half of cheese over chips. Top with rice mixture. Top with remaining cheese.
BAKE uncovered, 15 minutes or until cheese is melted. Garnish with green onions and sour cream, if desired.
