Asian Broccoli and Red Pepper with Peanuts

vegetable broth, divided

green onion, sliced
1

fresh ginger root, minced
1
Tbsp
minced fresh garlic

broccoli, chopped
2
cups
red pepper, chopped
3
Tbsps
soy sauce
1
cup
dry roasted peanuts, chopped
Directions
Prepare rice according to package directions.
Heat 1/4 cup of the vegetable broth in large skillet on medium-high heat. Add green onions, ginger and garlic; stir-fry 1 to 2 minutes or until tender.
Add broccoli, red pepper, soy sauce and remaining 1/4 cup vegetable broth. Bring to boil; reduce heat to low. Simmer 5 to 6 minutes or until broccoli is tender, stirring occasionally. Stir in peanuts.
Serve vegetable mixture over hot cooked rice.
