Mexican Pork with Vegetable Rice

Whole-grain brown rice simmered with spicy taco seasoning, pork tenderloin and vegetables ... a savory way to dinner tonight!

Makes 4 Servings

Ingredients

2 cups Minute® Brown Rice, uncooked
1 cup frozen corn
1 pkg (1.25 oz.) dry taco seasoning mix, divided
1 Tbsp chopped fresh cilantro leaves
1 lb pork tenderloin, cut into strips
2 tsps oil
1 cup red bell pepper, cut into strips
1 cup zucchini, thinly sliced
1 cup onion wedges
1 cup water

Directions

  • Cook rice as directed on package, adding corn and 1 tablespoon of the taco seasoning mix to cooking water along with rice. Stir in cilantro.
  • Meanwhile, cook pork in hot oil in large nonstick skillet on medium high heat 2 to 3 minutes or until pork is browned. Add remaining taco seasoning mix, red bell peppers, zucchini, onions and water. Cook on medium high heat 5 minutes or until vegetables are crisp-tender, stirring occasionally.
  • Serve pork mixture over rice mixture.
