Asparagus-Stuffed Fillets

Ingredients

10 oz asparagus, trimmed and chopped into pieces
4 sole, flounder or walleye fillets
1/2 cup sliced almonds
1/2 cup onion, chopped
1 garlic clove, minced
1/4 cup butter
1 can (13 3/4 oz.) chicken broth
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 1/2 cups Minute® White Rice or Minute® Brown Rice

Directions

Place three or four asparagus spears on each of the fillets; roll up. Lightly brown rolled fillets, seam side down, with almonds, onions and garlic in hot butter in large skillet. Turn fillets. Add broth, salt and pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff rice with fork.
